Celebrity Chef Bobby Flay brings his passion for bold and innovative Southwestern flair to Mesa Grill at Caesars Palace, the Las Vegas outpost of his acclaimed New York flagship restaurant. Open for lunch and dinner, and designed by renowned restaurant designer, David Rockwell, the open space features rich and vibrant colors and textures that are reminiscent of the American Southwest. Chef Flay developed his signature style of cuisine by marrying the flavors of southwest with his love of grilling. On his menu at Caesars Palace, he presents tongue-tingling dishes like New Mexican Spice Rubbed Pork Tenderloin, Ancho Chile Rubbed Chicken and Mango and Spice Crusted Tuna.
Las Vegas' proximity to Mexico gives the restaurant access to some of that country's highest-quality tequila and mezcal offerings, and the expansive wine list has a global reach yet maintains an emphasis on top American wines. A cocktail menu features signature drinks such as the Black Widow Mojito with Montecristo 12-year aged Guatemalan Rum, Grenadine, Fresh Mint, Cola and Fresh-Squeezed Lime or a Gimme’ a Lemonade – a refreshing mix of Charbay Green Tea Vodka and Lemonade. Of course, the restaurant also proudly features the perfectly mixed Mesa Grill Margarita, a drink that will never go out of season.

Mesa Grill offers Southwest-influenced cuisine to eager casino goers in Caesars. Located adjacent to the main casino floor and across from the Colosseum, the location provides an elegant escape from the bustle on the floor while still allowing patrons to keep an eye on the action.
The design is a soft, shining example of what fine restarants can be. The staff, while not in a hurry, are experienced and well trained. A full premium bar and extensive wine list fully complement the menu, but be ready for the $15 minimum on cocktails...
The food is delicious. I would recommend exactly what we had, although I suspect that any entree would delight and suprise. The crispy squid (and baby octopus) was served atop avocado vinaigrette. The appetizer was portioned for two and was the perfect start of our meal. The entrees were a southwest-rubbed pork loin with merlot barbeque sauce and a sweet corn tamale followed by a green chile cioppino (green chile based broth with mussels, scallop, lobster, crab, etc.). If you find yourself at Caesars Palace, find yourself at Mesa Grill.
